Looking for a high-protein shelf-stable cracker recipe?

I am trying to find something to replace the crackers and cereal my toddler eats so many of.  
I prefer the protein comes from lentils or beans, not dairy or tofu.  And would like some vegetables in the recipe as well for added nutrition.
